About Beef Tenderloin

The tenderloin is beef’s glamour cut. The meat is extraordinarily supple but lean, so beef tenderloin is often embellished with compound butter, paired with a rich, flavorful sauce like bearnaise or blue cheese, or topped “Oscar” style with seafood.

The tenderloin runs along the spine, making it the least worked muscle, which accounts for its tenderness. There are only two per steer, comprising about 1% of the animal, which is why beef tenderloin is typically the priciest steak on a restaurant menu.

The long, slender muscle has a pointy tip and a plump end. The filet mignon begins where the tenderloin widens. Beef tenderloin for foodservice can be roasted whole or portioned into steaks. Tenderloin tips can be used to make bite-size hors d’oeuvres and kabobs.
