Rabbit Hind Legs Add Excitement & Sophistication To Your Menu
Lean, tender rabbit is an approachable game meat that will appeal to diners looking for something new and different—and yet not too different.
Our wholesale rabbit from Spain has a mild flavor, like chicken but richer tasting. Rabbit is also a healthier protein choice. It’s even lower in calories, fat, and cholesterol than chicken, and high in protein, calcium, iron, and vitamins B6 & B12. Another plus: rabbit production has a lower impact on the environment than many other animal proteins.
Our wholesale rabbit legs can be prepared in many ways already familiar to diners at prices that aren’t extravagant. Braising is an ideal method for cooking rabbit legs, but they are also delicious fried. Below are a few menu ideas we came up with in our test kitchen. Average weight per leg: 7.5oz.
Rabbit Leg Cacciatore
Rabbit imparts a rich flavor to this Italian classic that chicken just can’t match. We braised the rabbit legs in a single layer at 300°F for 1.5 hours, turning every half hour, and letting them cool in the liquid. For service, warm the rabbit legs with capers and Castelvetrano olives in the braising liquid until it’s slightly reduced. Pair with polenta.
Seared Rabbit Leg Confit
Cure the rabbit legs overnight, rinse well and submerge in fat. Add some aromatics and cook at 225°F for 3 hours. Sear rabbit legs to order. We served it over a green risotto made with pureed spinach, basil, parsley & scallion tops, vibrant flavors that underscored the rich, yet delicate taste of our wholesale rabbit legs from Spain.
