WHY IS IBERICO PORK SO SPECIAL?



The Phoenicians are thought to have introduced pigs to the Iberian Peninsula, where they likely mated with native wild boars. Their offspring are the ancestors of the Iberico pigs so revered today for their lavish intramuscular marbling and unparalleled flavor.

The story of Iberico pork is rooted in the oak-shaded dehesas of Spain. In this richly diverse environment, the animals are free to roam. Their diet is all natural, consisting of grain, corn, grass and acorns.

The Spanish have a unique way of butchering. They know how to isolate unique cuts like pluma (end loin), presa (shoulder eye), and secreto (a skirt-like leg cut). Once you discover them, you won’t soon forget them.

When we decided to become an Iberico pork distributor, we went to Spain in search of the best product available. Our Iberico pork comes from Aljomar, a family-owned company founded in 1969 that fully controls their product from pasture to processing. As with any meat, the best Iberico pork meat comes from well cared for animals, which is why, as an Iberico pork wholesaler, we are especially proud to represent Aljomar, which received Animal Welfare Certification from the Spanish Association for Standardization and Certification (AENOR) in 2020, acknowledging the company’s high standards of animal welfare, as well as their sustainability efforts.
