In the asadores of Segovia, cochinillo asado—roast sucking pig—is revered. The dish is almost ceremonial in its pace and its presentation. A whole, small pig roasts for a very long while in a wood-burning oven, then it is served intact on an earthenware platter, its skin burnished and crackling. Often the edge of a plate is used to portion the meat, dramatically demonstrating its extreme tenderness.

Over centuries, poems have been written about the glories of Castilian cochinillo, so important is its place in Spanish culture. True suckling pigs must be less than 4-weeks old, weigh less than 15 lbs., and are fed only mother’s milk.
