Suckling Pig
(Cochinillo de Segovia)

Cochinillo de Segovia, authentic suckling pig, is a unique product rarely available in the U.S. In Spain, cochinillo is traditionally cooked whole, until the skin is golden and crackling. The pigs are 100% milk fed and range in size from 6 lbs. up to about 16 lbs.—perfect for making lechon.

 
 

Rabbit

Our rabbit comes from Spain's finest producer of wholesale rabbit meat, Grupo Hermi. The family-owned company controls all aspects of production, from breeding and feeding to processing and packaging. Consistently available and competitively priced, our Spanish rabbit meat is tender and flavorful. There is no finer bulk rabbit meat you can buy.

Quail

Our whole Spanish quail is from Urgasa, a family-owned business that has been raising quail in Catalonia since 1984. Urgasa raises quail cage free, minimizing stress, and they carefully select only the best. A cereal-rich diet produces luxuriously tender quail meat with a sweet, nutty flavor. Along with whole and semi-boneless wholesale quail, we also offer quail breasts and frenched quail “lollipop” legs.
