Cochinillo de Segovia, authentic suckling pig, is a unique product rarely available in the U.S. In Spain, cochinillo is traditionally cooked whole, until the skin is golden and crackling. The pigs are 100% milk fed and range in size from 6 lbs. up to about 16 lbs.—perfect for making lechon.
